Recommended Preparation: Herb-Crusted Rump Roast

What You'll Need:

• 1 Everglades Ranch Rump Roast (approx. 2.5 lbs)
• 3 tbsp Dijon mustard
• 2 tbsp olive oil
• 4 cloves garlic, minced
• 2 tbsp fresh rosemary, chopped
• 1 tbsp fresh thyme, chopped
• Salt and pepper

Instructions:

1. Mix mustard, oil, garlic, and herbs into a paste
2. Season roast with salt and pepper
3. Rub herb paste all over roast
4. Let rest 30 minutes at room temperature
5. Roast at 325°F until internal temperature reaches 135°F (about 1.5-2 hours)
6. Rest 15 minutes before slicing against the grain
