London Broil is an excellent, budget friendly cut from the top round. Because it's from the hind quarter, it's leaner and healthier than some of the fattier cuts, but with tons of flavor. It's best seared over high heat to medium rare and cut against the grain. Baste it with a little garlic herb butter to add back some fat and finish with a flaky salt. You're going to love it.
