What You'll Need:

  • 1 Everglades Ranch Bottom Round Roast (approx. 2.5 lbs)
  • 3 cups beef stock
  • 4 potatoes, quartered
  • 4 carrots, cut into chunks
  • 2 onions, quartered
  • 4 cloves garlic
  • Bay leaves, thyme
  • Salt and pepper

Instructions:

  1. Season roast with salt and pepper
  2. Sear in hot Dutch oven until browned on all sides
  3. Add stock, vegetables, and herbs
  4. Cover and cook at 300°F for 3-3.5 hours
  5. Roast is done when fork-tender
  6. Slice against the grain and serve with vegetables
