Ingredients:

For the Flank Steak:

  • 1.5–2 lb Everglades Ranch American Wagyu Flank Steak
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh lime juice
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • Salt and freshly ground black pepper, to taste

For the Mango Salsa:

  • 2 ripe Hale Groves South Florida Mangos, peeled, pitted & diced
  • 1 small red bell pepper, finely chopped
  • 1/4 red onion, finely diced
  • 1 small jalapeño, seeded and finely minced (optional for heat)
  • 2 tbsp fresh cilantro, chopped
  • Juice of 1 lime
  • Pinch of sea salt

Instructions:

  1. Marinate the Steak (1–4 hours):
    In a bowl, mix olive oil, garlic, lime juice, Worcestershire, paprika, salt, and pepper. Place the Wagyu flank steak in a resealable bag or dish, pour marinade over, and refrigerate for at least 1 hour (or up to 4 for deeper flavor).
  2. Prepare the Mango Salsa:
    In a bowl, gently toss all salsa ingredients together. Chill for at least 30 minutes to allow flavors to meld. The juicy, sweet Hale Groves mangos add a burst of tropical sunshine to every bite.
  3. Grill the Steak:
    Preheat your grill to high. Remove steak from marinade and grill 4–5 minutes per side for medium-rare, depending on thickness. Let rest 5–10 minutes before slicing against the grain.
  4. Serve & Celebrate:
    Plate slices of steak topped with a generous spoonful of mango salsa. Serve alongside grilled veggies or corn on the cob for a Memorial Day meal that honors the season—and the values we hold dear.
