SMASH BURGER RECIPE
Serves 4
8 oz Everglades Ranch American Waygu Ground Beef (divided 4 ways)
Salt & pepper
1 tbsp butter or tallow
4 flour tortillas or brioche buns
4 slices American cheese
Optional: pickles, onions, burger sauce
- Preheat a cast iron skillet or griddle until screaming hot.
- Roll beef into loose balls (don't overpack).
- Add butter or tallow to the pan.
- Place beef balls and immediately smash flat with a spatula.
- Season with salt and pepper.
- Cook 1–2 mins until crispy, flip, add cheese, cook 1 more minute.
- Toast buns in the beef fat, assemble, and enjoy.
